Simple Kitchen: Chicken pasta spinach salad

July 22, 2008 | A salad that serves as a main entrée is always one that I just love! It is healthy, filling and gives you a different dish during a busy week. This particular salad is also great for serving at bridal showers, baby showers, or just when you and your friends and family get together! So go buy your chicken and ingredients and lets get ready to cook!

This salad is one that you have to make the night before so it takes more preparation.

Chicken pasta spinach salad

Dressing:

1-cup oil
2/3-cup teriyaki sauce
2/3 cup white wine vinegar
3 T. sugar
3 T. brown sugar
1/2 t. salt
1/2 t. pepper

Cook 1 bag of bowtie pasta & marinate overnight in dressing. I marinate it in just a large bowl.

2 large chicken breasts (marinated overnight in teriyaki sauce) ­ Cook on grill or stovetop.

Crasins to taste (I use a small bag)
3 cans of mandarin oranges, drained
1/2 cup chopped parsley
1 bunch green onions, sliced
Toasted slivered almonds in brown and white sugar with butter on stove until golden.

In a large bowl, add all ingredients and toss right before serving!

I hope you enjoy this salad. For me, it has always been the salad that everyone loves and is getting the recipe for.
